STEAK FAJITAS RECEIPE

Ingredients:

  • 1 pound flank steak, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (adjust to your spice preference)
  • Salt and pepper to taste
  • Cooking spray
  • 8 small whole wheat tortillas (or use lettuce wraps for fewer points)

For serving:

  • Salsa
  • Guacamole (in moderation for SmartPoints)
  • Low-fat sour cream (in moderation for SmartPoints)
  • Shredded reduced-fat cheese (in moderation for SmartPoints)
  • Fresh cilantro, chopped

Instructions:

  1. In a large bowl, combine the sliced steak, minced garlic, chili powder, cumin, paprika, cayenne pepper, salt, and pepper. Toss well to coat the steak evenly with the spices.
  2. Heat a large skillet or pan over medium-high heat and coat it with cooking spray. Add the seasoned steak and cook for about 2-3 minutes per side, or until it’s cooked to your desired level of doneness. Remove the steak from the pan and set it aside.
  3. In the same skillet, add more cooking spray if needed, then add the sliced bell peppers and onions. Cook them for about 5-7 minutes or until they become tender and slightly caramelized.
  4. Return the cooked steak to the skillet with the peppers and onions, and heat everything together for another minute or so.
  5. Warm the whole wheat tortillas in the oven or on a dry skillet.
  6. Serve the steak and pepper mixture on the warmed tortillas. Top with salsa, guacamole, low-fat sour cream, shredded cheese, and chopped cilantro, as desired.
  7. Roll up the tortillas, securing them with toothpicks if needed.
