Ingredients:

For the Cannoli Shells:

  • 1 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1/2 tablespoon cocoa powder (unsweetened)
  • 1 tablespoon butter, melted
  • 1/4 cup white wine (or use a sugar-free alternative)
  • Cooking spray

For the Filling:

  • 1 cup part-skim ricotta cheese
  • 1/4 cup powdered sugar substitute (e.g., erythritol or monk fruit)
  • 1/2 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips (optional)

For Garnish (Optional):

  • Chopped pistachios
  • Grated dark chocolate

Instructions:

  1. Make the Cannoli Shells:
    • In a bowl, combine the flour, sugar, cocoa powder, melted butter, and white wine to form a dough.
    • Knead the dough briefly and then cover and let it rest for 30 minutes.
    • Preheat the oven to 350°F (175°C).
    • Roll out the dough on a floured surface and cut into circles. Wrap them around cannoli forms or use aluminum foil.
    • Place on a baking sheet coated with cooking spray.
    • Bake for about 15-20 minutes or until the shells are golden and crispy.
  2. Prepare the Filling:
    • In a bowl, mix the ricotta cheese, powdered sugar substitute, and vanilla extract until well combined.
    • Fold in mini chocolate chips if desired.
  3. Assemble the Cannoli:
    • Once the shells are cooled, gently remove them from the forms or foil.
    • Use a piping bag or a spoon to fill each shell with the ricotta mixture.
  4. Garnish (Optional):
    • Sprinkle chopped pistachios or grated dark chocolate on the ends of the cannoli for added flavor and presentation.
  5. Serve and Enjoy:
    • Chill the cannoli in the refrigerator for at least an hour before serving.
