Ingredients:

  • 1 pound lean Italian turkey or chicken sausage, sliced
  • 1 tablespoon olive oil
  • 1 large onion, thinly sliced
  • 2 bell peppers (assorted colors), thinly sliced
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, no sugar added
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • 1 cup reduced-fat shredded mozzarella cheese
  • Fresh basil or parsley for garnish (optional)

Instructions:

  1. Cook the Sausage:
    • In a large skillet, cook the sliced lean Italian sausage until browned. Remove excess fat if necessary.
  2. Sauté Vegetables:
    • In the same skillet, add olive oil and sauté the sliced onions, bell peppers, and minced garlic until softened.
  3. Combine Ingredients:
    • Add the diced tomatoes (with their juices) to the skillet. Sprinkle with Italian seasoning, salt, and black pepper. Mix well.
  4. Simmer:
    • Allow the mixture to simmer for 10-15 minutes, letting the flavors meld and the sauce thicken.
  5. Add Cheese:
    • Sprinkle the shredded mozzarella cheese over the sausage and peppers mixture. Cover the skillet and let it melt until bubbly.
  6. Garnish and Serve:
    • Garnish with fresh basil or parsley if desired.
  7. Serve Warm:
    • Serve the Cheesy Sausage and Peppers over whole-grain pasta, cauliflower rice, or your preferred low-point side.
