Weight Watchers Cheesy Sausage and Peppers, Italian Style:
Ingredients:
- 1 pound lean Italian turkey or chicken sausage, sliced
- 1 tablespoon olive oil
- 1 large onion, thinly sliced
- 2 bell peppers (assorted colors), thinly sliced
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes, no sugar added
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
- 1 cup reduced-fat shredded mozzarella cheese
- Fresh basil or parsley for garnish (optional)
Instructions:
- Cook the Sausage:
- In a large skillet, cook the sliced lean Italian sausage until browned. Remove excess fat if necessary.
- Sauté Vegetables:
- In the same skillet, add olive oil and sauté the sliced onions, bell peppers, and minced garlic until softened.
- Combine Ingredients:
- Add the diced tomatoes (with their juices) to the skillet. Sprinkle with Italian seasoning, salt, and black pepper. Mix well.
- Simmer:
- Allow the mixture to simmer for 10-15 minutes, letting the flavors meld and the sauce thicken.
- Add Cheese:
- Sprinkle the shredded mozzarella cheese over the sausage and peppers mixture. Cover the skillet and let it melt until bubbly.
- Garnish and Serve:
- Garnish with fresh basil or parsley if desired.
- Serve Warm:
- Serve the Cheesy Sausage and Peppers over whole-grain pasta, cauliflower rice, or your preferred low-point side.
