THE BEST LOW CARB CHICKEN SALAD

Ingredients:

  • 2 cups cooked chicken breast, shredded
  • 1/2 cup mayonnaise (make sure it’s keto-friendly)
  • 1/4 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the shredded chicken, mayonnaise, celery, red onion, parsley, and Dijon mustard.
  2. Mix the ingredients until well combined.
  3. Season the chicken salad with salt and pepper to taste. Adjust the seasoning according to your preferences.
  4. Refrigerate the chicken salad for at least 30 minutes before serving to allow the flavors to meld.
  5. Serve the keto chicken salad on a bed of lettuce, in a low-carb wrap, or enjoy it on its own.
