Oreo Chaffle with Low-Point Cream Cheese Filling
Ingredients:
For the Chaffle:
- 1/4 cup egg whites (0 points)
- 1 tablespoon unsweetened cocoa powder (1 point)
- 1 tablespoon almond flour (2 points)
- 1/2 teaspoon baking powder (0 points)
- 1 teaspoon granulated sugar substitute (0 points)
- 1/2 teaspoon vanilla extract (0 points)
For the Cream Cheese Filling:
- 2 tablespoons fat-free cream cheese (1 point)
- 1 teaspoon powdered sugar substitute (0 points)
- 1/4 teaspoon vanilla extract (0 points)
Instructions:
- Preheat your mini waffle maker.
- In a bowl, whisk together egg whites, cocoa powder, almond flour, baking powder, sugar substitute, and vanilla extract to make the chaffle batter.
- Pour half of the batter into the preheated waffle maker and cook until the chaffle is firm and set. Repeat with the remaining batter.
- In a separate bowl, mix together fat-free cream cheese, powdered sugar substitute, and vanilla extract to create the cream cheese filling.
- Once the chaffles are done, let them cool slightly. Spread the cream cheese filling on one chaffle and top it with another to create a sandwich.
- Optional: Sprinkle some additional cocoa powder or crushed sugar-free cookies on top for decoration.
