Lasagna Rolls With Vegetables

Ingredients:

– 12 lasagna noodles
– 2 cups of chopped vegetables (such as zucchini, mushrooms, bell peppers, and spinach)
– 2 cups of ricotta cheese
– 1/2 cup of grated Parmesan cheese
– 1 egg
– 1/2 teaspoon of salt
– 1/4 teaspoon of black pepper
– 2 cups of marinara sauce
– 1/2 cup of shredded mozzarella cheese

Instructions:

1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish.

2. Cook the lasagna noodles according to the package instructions until they are al dente. Drain and set aside.

3. In a large bowl, combine the chopped vegetables, ricotta cheese, Parmesan cheese, egg, salt, and black pepper. Mix well.

4. Spread a thin layer of marinara sauce on the bottom of the baking dish.

5. Lay a cooked lasagna noodle on a cutting board and spread about 1/4 cup of the vegetable mixture evenly over the noodle. Roll up the noodle tightly and place it seam-side down in the baking dish. Repeat with the remaining noodles and filling.

6. Pour the remaining marinara sauce over the top of the lasagna rolls and sprinkle with the shredded mozzarella cheese.

7. Bake for 25-30 minutes, or until the cheese is melted and bubbly.

8. Let the lasagna rolls cool for a few minutes before serving. Enjoy!
