These Keto Peanut Butter Fat Bombs are a perfect way to curb your cravings while staying within your low-carb diet. Enjoy their creamy, nutty goodness!

Ingredients:

  • 1/4 cup butter
  • 2 tablespoons heavy whipping cream
  • 1/2 cup creamy, unsalted low-carb peanut butter
  • 1/2 cup powdered keto-approved sweetener (e.g., Swerve)
  • 1/2 teaspoon salt
  • 1/2 cup chopped pecans
  • Low-carb chocolate for optional drizzling
  • Unsweetened coconut flakes (optional)

Instructions:

1. Prepare the Base:

  • Line a mini muffin tin tray with mini baking cups. Alternatively, you can use a silicone mold for shaping the fat bombs.

2. Create the Peanut Butter Mixture:

  • In a small saucepan (or you can use the microwave), combine the butter, heavy whipping cream, and peanut butter.
  • Heat and stir the mixture until everything is well combined and melted. This should result in a smooth and creamy mixture.

3. Sweeten the Mixture:

  • Remove the peanut butter mixture from the heat and stir in the powdered sweetener and salt. Ensure that the sweetener is fully incorporated into the mixture.

4. Prepare the Molds:

  • If you’re using unsweetened coconut flakes, add a small amount to the bottom of each mini baking cup or silicone mold, just enough to cover the bottom.

5. Fill the Molds:

  • Spoon the peanut butter mixture into the mini baking cups or silicone molds. Be sure not to overfill them.

6. Add Chopped Pecans:

  • Sprinkle the chopped pecans evenly over the top of each fat bomb. Gently press them down to make sure they adhere to the mixture.

7. Freeze:

  • Place the muffin tin pan (or silicone mold) in the freezer and allow the fat bombs to firm up. This should take approximately 30 minutes.

8. Drizzle with Chocolate (Optional):

  • If you want, you can drizzle low-carb chocolate over the top of the fat bombs. A sprinkle of sea salt can also add extra flavor.

9. Enjoy:

  • Once the fat bombs are firm, remove them from the molds and enjoy. Store any uneaten fat bombs in a freezer bag until you’re ready to enjoy another delicious and keto-friendly treat.
