Keto Egg Muffins
Ingredients:
- 8 large eggs
- 1/4 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup diced cooked bacon or sausage (choose a keto-friendly option)
- 1/4 cup chopped green onions
- Salt and pepper to taste
- Cooking spray or butter for greasing
Instructions:
- Preheat your oven to 375°F (190°C). Grease a muffin tin with cooking spray or butter.
- In a bowl, whisk together the eggs and heavy cream until well combined.
- Stir in the shredded cheddar cheese, diced bacon or sausage, and chopped green onions.
- Season the mixture with salt and pepper to taste. Mix well.
- Pour the egg mixture evenly into the muffin cups, filling each about 2/3 full.
- Bake in the preheated oven for 15-20 minutes or until the muffins are set and lightly golden on top.
- Allow the muffins to cool for a few minutes before removing them from the tin.
