GRILLED CHICKEN SALAD IN WEIGHT WATCHER
Ingredients:
For the salad:
- 2 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 cups mixed greens (e.g., spinach, arugula, lettuce)
- 1/2 cup fresh strawberries, sliced
- 1/2 cup fresh blueberries
- 1/4 cup sliced almonds
- 1/4 cup reduced-fat feta cheese (or any reduced-fat cheese of your choice)
For the dressing:
- 3 tablespoons Skinnygirl Raspberry Vinaigrette or a homemade WW-friendly vinaigrette (see recipe below)
For the homemade WW-friendly vinaigrette:
- 2 tablespoons balsamic vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon honey or a sugar substitute for WW-friendly option
- Salt and pepper to taste
Instructions:
- Season the chicken breasts with salt and pepper. Heat a grill or grill pan over medium-high heat. Grill the chicken for about 6-7 minutes on each side or until they reach an internal temperature of 165°F (74°C). Remove from the grill and let them rest for a few minutes before slicing.
- While the chicken is grilling, assemble your salad. In a large bowl, add the mixed greens, sliced strawberries, blueberries, sliced almonds, and reduced-fat cheese.
- In a small bowl or jar, whisk together the ingredients for the dressing: balsamic vinegar, Dijon mustard, honey (or sugar substitute), salt, and pepper.
- Slice the grilled chicken into thin strips.
- Drizzle the dressing over the salad and toss gently to combine.
- Top the salad with the grilled chicken slices.
