GRILLED CHICKEN SALAD IN WEIGHT WATCHER

Ingredients:

For the salad:

  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 cups mixed greens (e.g., spinach, arugula, lettuce)
  • 1/2 cup fresh strawberries, sliced
  • 1/2 cup fresh blueberries
  • 1/4 cup sliced almonds
  • 1/4 cup reduced-fat feta cheese (or any reduced-fat cheese of your choice)

For the dressing:

  • 3 tablespoons Skinnygirl Raspberry Vinaigrette or a homemade WW-friendly vinaigrette (see recipe below)

For the homemade WW-friendly vinaigrette:

  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey or a sugar substitute for WW-friendly option
  • Salt and pepper to taste

Instructions:

  1. Season the chicken breasts with salt and pepper. Heat a grill or grill pan over medium-high heat. Grill the chicken for about 6-7 minutes on each side or until they reach an internal temperature of 165°F (74°C). Remove from the grill and let them rest for a few minutes before slicing.
  2. While the chicken is grilling, assemble your salad. In a large bowl, add the mixed greens, sliced strawberries, blueberries, sliced almonds, and reduced-fat cheese.
  3. In a small bowl or jar, whisk together the ingredients for the dressing: balsamic vinegar, Dijon mustard, honey (or sugar substitute), salt, and pepper.
  4. Slice the grilled chicken into thin strips.
  5. Drizzle the dressing over the salad and toss gently to combine.
  6. Top the salad with the grilled chicken slices.
