Chocolate Sandwich Cookies

Chocolate Sandwich Cookies

For the Cookies:

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup unsalted butter, softened
  • 1/3 cup granulated sweetener (such as erythritol or stevia)
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Filling:

  • 4 oz cream cheese, softened
  • 2 tablespoons powdered sweetener
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together almond flour, coconut flour, cocoa powder, baking powder, and salt.
  3. In another bowl, using an electric mixer, cream together the softened butter and granulated sweetener until light and fluffy. Add the egg and vanilla extract, continuing to mix until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  5. Scoop out tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet and flatten each ball with the back of a spoon.
  6. Bake in the preheated oven for 10-12 minutes or until the edges are set. Allow the cookies to cool completely on the baking sheet.
  7. In a separate bowl, prepare the filling by mixing together the softened cream cheese, powdered sweetener, and vanilla extract until smooth.
  8. Once the cookies are completely cooled, spread a dollop of the cream cheese filling on the bottom of one cookie and sandwich it with another.
  9. Repeat until all cookies are sandwiched together.
  10. Store the cookies in the refrigerator for at least an hour before serving to allow the filling to set.
