Chocolate Sandwich Cookies
For the Cookies:
- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/3 cup unsalted butter, softened
- 1/3 cup granulated sweetener (such as erythritol or stevia)
- 1 large egg
- 1 teaspoon vanilla extract
For the Filling:
- 4 oz cream cheese, softened
- 2 tablespoons powdered sweetener
- 1/2 teaspoon vanilla extract
Instructions:
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together almond flour, coconut flour, cocoa powder, baking powder, and salt.
- In another bowl, using an electric mixer, cream together the softened butter and granulated sweetener until light and fluffy. Add the egg and vanilla extract, continuing to mix until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Scoop out tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet and flatten each ball with the back of a spoon.
- Bake in the preheated oven for 10-12 minutes or until the edges are set. Allow the cookies to cool completely on the baking sheet.
- In a separate bowl, prepare the filling by mixing together the softened cream cheese, powdered sweetener, and vanilla extract until smooth.
- Once the cookies are completely cooled, spread a dollop of the cream cheese filling on the bottom of one cookie and sandwich it with another.
- Repeat until all cookies are sandwiched together.
- Store the cookies in the refrigerator for at least an hour before serving to allow the filling to set.
