Oreo Chaffle with Low-Point Cream Cheese Filling

Ingredients:

For the Chaffle:
  • 1/4 cup egg whites (0 points)
  • 1 tablespoon unsweetened cocoa powder (1 point)
  • 1 tablespoon almond flour (2 points)
  • 1/2 teaspoon baking powder (0 points)
  • 1 teaspoon granulated sugar substitute (0 points)
  • 1/2 teaspoon vanilla extract (0 points)
For the Cream Cheese Filling:
  • 2 tablespoons fat-free cream cheese (1 point)
  • 1 teaspoon powdered sugar substitute (0 points)
  • 1/4 teaspoon vanilla extract (0 points)

Instructions:

  1. Preheat your mini waffle maker.
  2. In a bowl, whisk together egg whites, cocoa powder, almond flour, baking powder, sugar substitute, and vanilla extract to make the chaffle batter.
  3. Pour half of the batter into the preheated waffle maker and cook until the chaffle is firm and set. Repeat with the remaining batter.
  4. In a separate bowl, mix together fat-free cream cheese, powdered sugar substitute, and vanilla extract to create the cream cheese filling.
  5. Once the chaffles are done, let them cool slightly. Spread the cream cheese filling on one chaffle and top it with another to create a sandwich.
  6. Optional: Sprinkle some additional cocoa powder or crushed sugar-free cookies on top for decoration.
