1/2 cup vegan chocolate chips (plus extra for topping)
1/2 cup chopped nuts (optional, e.g., walnuts or pecans)
Instructions:
Preheat Oven:
Ready your oven for baking at 350°F (175°C). Prepare a loaf pan of appropriate size by greasing it or lining it with parchment paper.
Mash Bananas:
Mash the ripe bananas with a fork or potato masher in a big mixing dish.
Add Wet Ingredients:
Add the applesauce, melted coconut oil, coconut sugar (or brown sugar), and vanilla extract to the mashed bananas. Mix well until the ingredients are thoroughly combined.
Combine Dry Ingredients:
Flour, baking soda, baking powder, and salt should be mixed in a different bowl.
Mix Batters:
Stirring constantly, add the dry mixture to the wet mixture little by little until just mixed. Make sure not to mix it too much.
Fold in Chocolate Chips and Nuts:
Toss in the chopped nuts and vegan chocolate chips (if used) with a gentle but thorough folding motion until well combined.
Transfer to Pan:
Evenly distribute the batter into the loaf pan that has been prepared.
Top with Chocolate Chips:
To top it all off, crumble some extra vegan chocolate chips over the batter.
Bake:
Fifty to sixty minutes into the preheated oven, or until a toothpick left with just wet crumbs or no residue emerges from the center when inserted.
Cool:
After the banana bread has cooled for approximately 10 minutes in the pan, turn it out onto a wire rack to finish cooling.
Slice and Serve:
Once cooled, slice the Vegan Chocolate Chip Banana Bread and savor the deliciousness.
