Here’s a recipe for Vegan Breakfast Burritos:

Ingredients:

  • 1 tbsp olive oil
  • 1/2 onion, chopped
  • 1 red bell pepper, chopped
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup firm tofu, crumbled
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 avocado, sliced
  • 1/4 cup chopped fresh cilantro
  • 4 whole wheat tortillas

Directions:

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper and cook until softened, about 5 minutes.
  2. Add the black beans, tofu, garlic powder, smoked paprika, salt, and pepper. Cook for another 5 minutes or until the tofu is heated through and lightly browned.
  3. Warm the tortillas in the microwave or on a griddle.
  4. Place a scoop of the tofu mixture onto the center of each tortilla.
  5. Top with sliced avocado and chopped cilantro.
  6. Roll up the burritos by folding the sides over the filling and then rolling up from the bottom.
  7. Serve immediately or wrap in foil to keep warm until ready to serve.
