Broccoli Salad

Ingredients

500 grams of broccoli
2 grated carrots
5-6 pickled gherkins finely chopped
1 can of canned corn

For the sauce;
1 pinch of parsley
2 cloves of grated garlic
5-6 tablespoons of vegan yogurt
2 full tablespoons of mayonnaise
1 tablespoon mustard
Salt
Black pepper

Instructions

We cut the broccoli florets into small pieces and wash them. We boil it for 5 minutes, strain the water, and transfer it to a suitable container to cool.
We peel the carrots, grate them, put them in a suitable pan, fry them with a little olive oil and leave them to cool.
Then we add carrots, pickled gherkins and corn.
For the sauce; Chop the parsley, put it in a large bowl, add yoghurt, garlic, mayonnaise, mustard, salt and pepper and mix.
Then pour the sauce over the broccoli and mix well.
We take it to the serving plate. Good luck to those who will try.
