Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped fresh strawberries
  • 3/4 cup non-dairy milk (such as almond, soy, or oat milk)
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 tablespoon apple cider vinegar

Instructions:

  1. Preheat your oven to 350°F (180°C) and grease a 9×5 inch loaf pan with cooking spray or oil.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Add the chopped strawberries to the bowl and toss to coat in the flour mixture.
  4. In a separate bowl, mix together the non-dairy milk, vegetable oil, vanilla extract, and apple cider vinegar.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix the batter.
  6. Pour the batter into the prepared loaf pan and smooth out the top with a spatula.
  7. Bake for 50-60 minutes or until a toothpick inserted into the center of the bread comes out clean.
  8. Let the bread cool in the pan for 10 minutes before removing it from the pan and transferring it to a wire rack to cool completely.
