Weight Watchers-Friendly German Chocolate Cake:

Ingredients:

For the Cake:

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened applesauce
  • 1/2 cup unsweetened almond milk
  • 1/4 cup vegetable oil
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup boiling water

For the Frosting:

  • 1/2 cup chopped pecans
  • 1/2 cup shredded coconut
  • 1/2 cup unsweetened almond milk
  • 1/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions:

For the Cake:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. In a medium bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, whisk together the applesauce, almond milk, vegetable oil, sugar, eggs, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Stir in the boiling water until the batter is smooth. The batter will be thin, but that’s okay.
  6. Divide the batter evenly between the prepared cake pans and smooth the tops.
  7. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

For the Frosting:

  1. In a saucepan over medium heat, combine the chopped pecans, shredded coconut, almond milk, granulated sugar, brown sugar, butter, vanilla extract, and salt.
  2. Bring the mixture to a simmer, stirring frequently. Cook for 5-7 minutes or until the frosting thickens.
  3. Remove the frosting from heat and let it cool slightly.
  4. Once the cakes are completely cooled, spread the frosting over the top of one cake layer. Place the second layer on top and frost the top of the cake.
  5. Slice, serve, and enjoy your Weight Watchers-friendly German Chocolate Cake!
