Ingredients:
- 8 chicken drumsticks
- 4 medium potatoes, peeled and cut into chunks
- 1 cup baby carrots
- 4 mushrooms, sliced
- 1 packet French onion soup mix
- 2 cups baby spinach leaves
- Steamed greens (such as broccoli or green beans), for serving
- 1 cup dried apricots, halved if desired
Instructions:
- Place the chicken drumsticks in the slow cooker.
- Add the potatoes, baby carrots, and sliced mushrooms on top of the chicken.
- Sprinkle the French onion soup mix evenly over the ingredients in the slow cooker.
- Do not add any liquid to the slow cooker.
- Cook on high heat for approximately 4 hours or until the chicken is cooked through and tender.
- Just before serving, add the baby spinach leaves to the slow cooker and stir gently to wilt them.
