Zero Point Sheet Pan Shrimp Fajitas

 

Ingredients:

1 lb raw shrimp, peeled and deveined
Bell peppers (assorted colors), sliced
Onion, sliced
Cherry tomatoes, halved
1 tablespoon olive oil
1 tablespoon fajita seasoning (check for low or zero-point options)
Salt and pepper, to taste
Fresh cilantro, chopped (optional, for garnish)
Lime wedges, for serving
Instructions:

Preheat your oven to 400°F (200°C).

In a large mixing bowl, combine the shrimp, sliced bell peppers, sliced onions, and halved cherry tomatoes.

Drizzle the olive oil over the ingredients and sprinkle the fajita seasoning. Toss everything well to ensure the seasoning coats the shrimp and vegetables evenly.
