Ingredients:

  • 1 pound boneless, skinless chicken breasts, cooked and shredded
  • 2 cups cooked brown rice (or cauliflower rice for a lower-carb option)
  • 2 cups mixed vegetables (e.g., peas, carrots, and green beans), cooked
  • 1 cup non-fat Greek yogurt
  • 1 cup reduced-fat shredded cheddar cheese
  • 1 can (10.5 oz) reduced-fat cream of chicken soup
  • 1/2 cup low-sodium chicken broth
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Cooking spray

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare Chicken:
    • Cook the chicken breasts (boil, bake, or grill) until fully cooked. Shred the chicken.
  3. Prepare Rice and Vegetables:
    • Cook brown rice according to package instructions. Steam or cook the mixed vegetables until they are tender-crisp.
  4. Make the Sauce:
    • In a large mixing bowl, combine non-fat Greek yogurt, reduced-fat shredded cheddar cheese, reduced-fat cream of chicken soup, chicken broth, garlic powder, salt, and pepper. Mix well.

    • In a casserole dish coated with cooking spray, layer the shredded chicken, cooked brown rice, and mixed vegetables.
  6. Add the Sauce:
