Ingredients:

For the Black Beans:

  • 2 cans (15 oz each) black beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/4 cup water

For the Taco Assembly:

  • Corn or whole wheat tortillas (choose a lower SmartPoints option)
  • Shredded lettuce
  • Diced tomatoes
  • Salsa (choose a lower SmartPoints option or make a fresh one)
  • Reduced-fat shredded cheese
  • Non-fat Greek yogurt or low-fat sour cream
  • Fresh cilantro, chopped (optional)
  • Lime wedges for serving

Instructions:

  1. Prepare the Black Beans:
    • In a skillet, heat olive oil over medium heat. Add diced onions and garlic, sauté until softened.
    • Add black beans, cumin, smoked paprika, salt, and pepper. Stir well.
    • Pour in water and simmer for 5-7 minutes, allowing the flavors to meld. Mash some beans with a fork for a thicker consistency.
  2. Assemble the Tacos:
    • Warm the tortillas in a dry skillet or microwave according to package instructions.
    • Spoon a portion of the black bean mixture onto each tortilla.
  3. Add Toppings:
    • Top the black beans with shredded lettuce, diced tomatoes, salsa, reduced-fat shredded cheese, and a dollop of non-fat Greek yogurt or low-fat sour cream.
  4. Garnish:
    • Sprinkle with fresh cilantro if desired.
  5. Serve:
    • Serve the Black Bean Tacos with lime wedges on the side.
