Ingredients:

- 2 cans (15 oz each) black beans, drained and rinsed

- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1/4 cup water
For the Taco Assembly:
- Corn or whole wheat tortillas (choose a lower SmartPoints option)
- Shredded lettuce
- Diced tomatoes
- Salsa (choose a lower SmartPoints option or make a fresh one)
- Reduced-fat shredded cheese
- Non-fat Greek yogurt or low-fat sour cream
- Fresh cilantro, chopped (optional)
- Lime wedges for serving
Instructions:
- Prepare the Black Beans:
- In a skillet, heat olive oil over medium heat. Add diced onions and garlic, sauté until softened.
- Add black beans, cumin, smoked paprika, salt, and pepper. Stir well.
- Pour in water and simmer for 5-7 minutes, allowing the flavors to meld. Mash some beans with a fork for a thicker consistency.
