Ingredients:

2 ripe avocados
2 cups all-purpose flour (or a gluten-free flour blend)
1 teaspoon baking powder
1/2 teaspoon salt
1 tablespoon lemon juice
1/2 cup warm water (adjust as needed)
For Topping (Optional):
Cherry tomatoes, sliced
Fresh basil leaves
Olive oil for drizzling
Salt and pepper to taste

Instructions:
1. Prepare the Avocado Dough:
In a bowl, mash the ripe avocados until smooth. Mix gluten-free flour blend, baking powder, salt, and lemon juice into the dough. Combine well.
2. Form a Dough:
Add warm water little by little to the mix until a soft dough forms. For a few minutes, knead the dough until it gets smooth and springy.
3. Rest the Dough:
Cover the dough with a clean kitchen towel and let it rest for about 15-20 minutes.
4. Preheat the Oven:
Warm the oven up to 200°C (400°F).
5. Divide and Roll Out:
Split the dough into four equal pieces. Roll out each piece into a thin, flat round on a floured surface.
6. Bake:
Place the rolled-out dough on a baking sheet. Bake in the preheated oven for 12-15 minutes or until the edges are golden brown.
7. Optional Toppings:
If desired, top the baked flatbreads with sliced cherry tomatoes, fresh basil leaves, a drizzle of olive oil, and a sprinkle of salt and pepper.
